  季裕棠表示,Wolfgang Puck Bar & Grill設計靈感來自加州平房的露臺,一個陽光穿透、明亮色調的地方,藉此提供賭城遠離那些五光十色的活動外的一個休憩空間。一如Wolfgang Puck最初經營Spago餐廳中所賦予的特質,在Bar & Grill中,結合海灘生活的充沛活力以及庭院的舒適優雅,藉此捕捉加州美食的用餐精髓。

  如同平面設計師Robert Louey所說,加州在美國是一個非常獨特的區域,從電影、時尚、音樂等,發展出一種獨特的加州文化。「you are what you eat,but have fun doing it」,更是一語道破加州這種講究享樂的休閒步調。如今,加州美食所代表的是融合世界美食精髓與傳統西岸口味所呈現出一種「無國界美食」的象徵。

  Wolfgang Puck Bar&Grill,擁有200個座位。所有的細節包括實體結構、室內設計、餐桌擺飾、裝飾配件、員工制服、平面設計甚至音樂的選擇,皆由季裕棠的設計團隊一併規劃。企圖在賭城散發一種戶外、隨性、享樂、活力、優雅的休閒氣息,以及一個暫時遠離擁擠、喧鬧活動的綠洲。

  進入餐廳,U字形酒吧是第一個視覺焦點,提供人們聚集交流的場地。鄰接酒吧的咖啡廳,則供應如早餐、輕食、宵夜或睡前酒等休閒餐點。咖啡廳立面由9座捲曲的柳木細枝糾纏成9英呎高的巨型植物花叢,並藉此與外界區隔。往內則是露台的用餐區,天花板由灰色底加上蜜色格子紋布作裝飾出隨興、趣味的氛圍,是與朋友碰面的絕佳地方。在用餐區前方,季裕棠設計了「Glass Hedges」(玻璃光盒),將富想像力的圖像複製到玻璃光盒上,宛如白籬笆上花叢覆蓋的繽紛景象,重現了典型的加州風格。

  鄰接露台、位於咖啡廳盡頭的「Glasshouse Dining」,立面由半抽象的弧線彩色玻璃營造出類似拼貼效果,藉由光影的折繞反射,給人一種彩虹浮現的幻象。最後,季裕棠為此餐廳規劃了一個特別且極富視覺張力的透明酒窖,陳列來自加州與世界各地的數以百計美酒以及獨立、不受干擾的品酒室。

   在美國具有影響、數度為奧斯卡晚宴掌舵的名廚Wolfgang Puck,不僅是美國影視紅星的最愛,也是在賭城首開「名廚餐廳」風氣的廚師。

  奧地利籍的他,早在70年代,便開風氣之先,將正統法國菜融合亞洲烹飪技巧與加州料理美感的融合式料理(fusion cuisine)而聲名大噪。從1982年開設第一家Spago餐廳開始,20年來,Wolfgang Puck建立了以自己為品牌的美食王國,目前共有包括在洛杉磯、舊金山、拉斯維加斯、帕洛阿爾托和毛伊等地共12家正式餐廳,以及51 家分佈在美國各市區、機場和超級市場的美式休閒餐廳和快餐店。


"California Dreaming" treatment for Wofgang Puck's MGM GRAND landmark。Tony Chi of New York designers, plans to bring a touch of California dreaming to Las Vegas in his design for the new Wolfgang Puck Bar & Grill. Chi says that while he wanted to have some fun with the design, the real aim was to capture the essence of the California dining experience and lifestyle popularized by Puck himself in Spago, his earliest Los Angeles restaurant.“The new Bar & Grill will provide an oasis of casual, California, outdoor living and dining style in the midst of the hustle and bustle and constant activity that Las Vegas-and the MGM Grand in particular-is famous for," he says.

"As my graphic designer Robert louey has pointed out, the famed California lifestyle has a special place in American culture." The carefree attitude of 'you are what you eat, but have fun doing it' has evolved in into a more sophisticated scene through international influences and more demanding palates," he says.“California dining today is comfortably casual and at the same time elegant, combining the finery of a world class meal with the traditional West Coast spirit of fun and unpretentious approach to life.“It is about fresh food in a great setting; about enjoying life and looking good."

Wolfgany Puck Bar & Grill will seat 200 and feature five layers(described below) and have a permanent Wolfgang Puck sculpture out front.All design features of the Bar & Grill have been carried out by Chi and his team at tonychi and associates.

"The design combines the energetic feel of the beach lifestyle and the cool beauty of a California garden," Chi says. "It is sporting, outdoor, casual, whimsical playful, young and elegant; and a breath of fresh air in the Las Vegas casino context.

"Entry to the restaurant will instantly bring customers to the first dining "layer", the U-shaped Puck Bar, a place for friends to congregate; a centre of great activity.
Adjacent to the Bar is the cafe, a place for casual dining (breakfast, light lunch or evening snack) and for a happy hour cocktail or nightcap.The facade of the cafe section features curly willow twigs intertwined to form nine giant wreaths-each nine(9) feet tall-and the overall dining experience is avant garde.In the second "layer" there is patio dining, a casual and fun atmosphere anda great place to meet friends.

Again located at the front section of the whole restaurant space, the patio has flooring of butternut/honey coloured recycled timber and the "layer" is covered by a white checked plaid awning.The patio area is recreated in typical California style, surrounded by creatively designed "glass hedges" (lightboxes surrounded by glass and with image interlayers) to give the impression of flowered white hedges and colourful plants.The next "layer" features kitchen dining where a large butcher's block serves as one long communal table. It is very rustic with a wood burning oven, with the oven enclosures made of hammered nickel plate to pick up the shimmer of the night lights.

Adjacent to the patio and at the opposite end of the cafe is the "Glasshouse dining layer", where the facade is shaped in a semi-circle of coloured glass and gives the illusion of a rainbow.Finally, adjacent to the Glasshouse is a Chi speciality, a dramatic wine cellar and lasting room, tempting customers with hundreds of bottles of wine from California(of course) an around the globe.

Put it all together and Tony Chi's casual but comfortable, playful but elegant, homey but stylish design brings California bungalow and patio style to the bright lights of Las Vegas, complementing Puck's fresh, California cuisine perfectly. Text by Tony Chi and Associates.
